The Noble Hill winery sits on the northwest foothills of Simonsberg Mountain in the Simonsberg-Paarl region. Located 30 miles from Cape Town and just north of Stellenbosch, Simonsberg has been producing some of South Africa’s best wines for more than 300 years. In this environment Chenin Blanc develops gorgeously ripe and layered fruit flavors while still retaining its all-important acidity. By choosing to age this Chenin in its lees (a practice that is common in Champagne and France’s Loire Valley), Noble Hill creates a wine of exceptional complexity and structure.
The Noble Hill Sur Lie Chenin Blanc is a blend of fruit from both 33-year-old vines and new growth vines; the combination of grapes from two different sites provides balance and nuance to the finished wine. Aging takes place in concrete vessels using the ‘Sur Lie’ process. The wine is fermented with wild yeast populations and left to age on its fine lees for nine months with regular stirring, allowing it to develop fullness and depth. The result: intricately layered aromas of fresh lime blossom, honeydew melon, and green apple, leading into notes of tropical fruit and citrus on the silky palate.
